- Prepare 3 lb of oxtail, cut into serving pieces.
- It's 2 lb of ox tripe, cleaned and cut into serving pieces.
- You need 2 piece of large eggplants, washed and cut about 2 inches each.
- You need 1 bunch of string beans, cut about 2 inches long.
- It's 2 bunch of bokchoy, cleaned and washed.
- You need 1 tsp of atchuete for color, add more if needed.
- It's 1/2 tsp of salt to taste.
- Prepare 4 tbsp of peanut butter, to thicken the sauce.
- It's 1/2 large of onion, minced and set aside.
- You need 2 packages of of Mama Sita's Kare-kare mix, dissolved and set aside.
- You need 1/2 cup of Barrio Fiesta Regular Shrimp Paste(bagoong alamang), to be served later.

- Boil the oxtail for 2 hours or until tender. If you have pressure cooker, cook it for 45minutes max. Then add the ox tripe and onions and boil for another 1 hour..
- On separate pan, blanch the bokchoy, string beans and eggplant and set aside..
- If the meat is tender, put Mama Sita's kare-kare mix, atchuete, salt and peanut butter. Let it boil in low heat for 10 minutes stirring occasionaly..
- Serve with blanched veggies and shrimp paste over hot rice. Enjoy! :).
