Fajeto is a yogurt and ripe mango puree based Guajarati recipe which. is delicious in taste.
This kadhi is tangy and sweet in taste which serves with rice and phulkas.
This kadhi is very popular in mango season which cooked with sour curd and chickpea flour (besan).
Bahan Membuat Fajeto (Gujarati ripe mango curry)
- Prepare of Ingredients for making curry :-.
- You need of ripe mango pulp.
- It's of curd/dahi.
- You need of water.
- You need of Chickpea flour/besan.
- You need of Jaggery/sugar (optional).
- It's of Red chilli powder.
- Prepare of Turmeric/haldi.
- You need of Salt.
- It's of Ingredients for tempering:-.
- It's of Ghee.
- It's of Cumin seeds.
- You need of Mustard seeds.
- You need of Cinnamon stick/dalchini.
- You need of Dry red chilli.
- You need of Green chilli (optional).
- It's of Curry leaves.
- Prepare of Asafoetida.
- Prepare of Chopped coriander leaves.
Langkah Memasak Fajeto (Gujarati ripe mango curry)
- Steps for preparing curry:-.
- In a big bowl, add 1 cup curd and chickpea flour,with the help of whisk mix well..
- Now add 1cup mango puree to the bowl and mix everything well,make sure there is no lumps in the batter..
- Add 2 cups of water,1/2 tsp chilli powder,1/4 tsp turmeric and salt to taste.(Am not using jaggery as my mango pulp is enough sweet to balance the sour taste of curd.If your mango pulp is not sweet enough or you like your curry to be more sweet feel free to add jaggery/sugar as per your taste).
- Whisk the mixture well,pour in a deep pan and turn on the gas to medium heat..
- Bring the mixture to boil,stir occasionally..
- When mixture starts boiling lower the heat and simmer for 8-10 minutes..
- Whisk mixture occasionally while simmering,to get smooth and lump free curry..
- While curry is simmering let's prepare tempering..
- Heat a small pan over medium heat,add 1tbsp of ghee to hot pan..
- Add 1tsp cumin seeds,1 tsp mustard seeds and 1/8 tsp hing..
- When cumin and mustard seeds starts spluttering add 7-8 curry leaves,1" cinnamon stick,2 dry red chillies,2 green chillies and stir for few seconds..
- Pour the tempering over simmering fajeto curry..
- Turn of the heat and garnished with 1-2 tbsp chopped coriander leaves..
- Serve fajeto curry with steamed rice..
The sweet mango balances the spice from chillies and sourness of curd perfectly. So these mango seeds along with little extra mango pulp are used for making this ras no fajeto recipe.
