  1. Prepare of samp rinsed and soaked overnight.

  2. Drain the water after soaking and place the samp in large pot add 7 cups of water allow to simmer slowly.
  3. Cook until the samp and beans get soft season with salt to taste..
  4. Saute the onion in a little oil until translucent add curry powder allow to cook for 3 minutes to get flavour out..
  5. Add tomato,vegetable stock 1/2 cup of water and potatoes.
  6. Allow to simmer until potatoes are soft.
  7. Drain the slightly soft samp and beans together add to mixture allow to cook slowly.
  8. Stir in the butter and mix well..
  9. It's ready.
